Add the orange juice and zest and mix well. Sift together the flour, baking powder, baking soda and salt in another medium bowl. Use a whisk to lightly mix the wet and dry ingredients together. Pour the mixture into the prepared pan.

  3. Now, in the Dry ingredients bowl mix the EVOO & orange juice nicely until all well combined and incorporated
  4. Once the batter is ready- Take your choicest shape/size pre-greased & pre-lined baking tray with the parchment paper & @it's bottom lay out the thin sliced orange roundels as is seen in the pics & then pour in the entire batter to it
  5. Tap the baking tray a few times to release the trapped air inside and the batter to sit well & put it inside the preheated oven @170C for about 30-40 mins time or until it successfully passes the clean toothpick/knife test
  6. Once baked- Take it out, allow it to cool completely & then flip it onto it's bottom side (refer the pics), garnish with the sprinkled icing sugar and orange slices/zests, etc. according to your choice
  7. Since, this is called the UPSIDE DOWN CAKE It’s to be served: at it's bottom part as the UP & top most part at it's DOWN
