Stir well and let cook until fruit starts to release its juices. Cover fruit with the cinnamon sugar-coated biscuit dough in as even a layer as possible. Cover pan tightly with foil and close the grill.

- If you rinse your fish, dab it with some kitchen roll after to dry the fillets.

- Place the fish flat on foil
- Then sprinkle with salt and the onions,
- Drizzle with the lemon juice.
- Add the butter.
- Add the coriander whole.

- Reserve in fridge until its time to cook.
- When ready to cook place the rapped parcel on the barbecue grill and cook for about 20 minutes.
- Be careful when you open the foil because all the steam will come out.
Remove from the grill, cut into wedges and place into a gratin dish. To the peaches add half the butter, half the brown sugar and half. The changes to the mac & cheese are spot on. Couldn't get enough of the peach cobbler either. And if the food wasn't enough - and it very well could be - Roger was kind enough to treat us to some special attention and certainly made us feel like family.
