Microwave on high heat until the grits begin to boil (time will depend on the strength of your microwave).

  1. Place a sheet of baking paper on a heat-proof plate. Arrange the Potato strips on the paper, season with Salt & Pepper, and scatter the grated Cheese over.
  2. Microwave for 5 to 6 minutes. *Note: If you wish the potato strips and cheese browned evenly, re-arrange them halfway through cooking. You may need to cook extra time.
  3. Sprinkle with freshly ground Pepper and grated Parmesan and enjoy.
  4. *Note: Oven bake is more satisfying but it takes longer time. For the below photo, seasoned frozen chips were used.

Combine the water, grits, and salt in a deep microwave-safe bowl. Microwave on high heat until the grits begin to boil (time will depend on the strength of your microwave). If the grits are too thick, add a little more hot water. Place the second flour tortilla atop the Cheddar layer. Add a sprinkle of cheese if desired, or omit to keep your microwave omelette dairy free.
