- Take the chickpeas flour add it to the powders, salt, sugar, onion coriander leaves, a tbsp of mustard oil and squeeze a lemon.
- Mix it thorough to a semi-thick consistency.
- Stuff the bittergourd with the stuffing.
- Take a wok or kadai add to it 2 tbsp of mustard oil. Heat it and get it to the smoking point.
- To this oil add the stuffed bittergourds. Cover the wok for 8 to 9 minutes. Remove the cover and check whether the bittergourds are getting shallow fried
- Then turn the bittergourds to the other side. Again cover them for 8 - 9 minutes.
- Then slowly remove the cover and toss the bittergourd sideways. If they are cooked properly they will not stick to the wok.
- After checking for the desired result. Remove and serve them.
- They go very well with a meal of simple dal, rice.
