In a medium skillet over medium heat, melt butter. I have made Chef John's amazing and versatile Mushroom Gravy many times. Than I had to make it my own. I use a combination of mushrooms.
Instructions to make Stuffed mushroom gravy:
- Take mushroom and wash it with hot water. Take out their stem and keep it aside.
- Take a bowl and add grated paneer in it. Add 2 finely chopped chillies, ginger and mix it well. Now add 1/2 teaspoon salt and red chilli powder, some finely diced dryfruits. Mix it and fill it in mushrooms.
- Coat these mushrooms with corn flour syrup and fry it on medium flame till it changes to golden brown colour. Keep it aside.
- Take a pan and add oil in it. Let it gets hot and add cumin seeds in it. Cook it for 1 min and add ginger paste and 2 chopped green chillies in it. Cook it for another 2 min and add onion in it. Cook it for 5 min on medium flame and add capsicum in it. Cook it for another 5 min and then add french beans in it.
- Cook all these vegetables till it gets soften and then add salt, red chilli powder in it. Cook it for 2 min and add soya sauce, chilli sauce, tomato sauce, vinegar in it. Mix it again.
- Now add water in it and cook it for another 10 min on low flame.
- Then add stuffed mushrooms in it and let it cook for 5 min on low flame. Then Turn off the flame and garnish it with chopped coriander and some French beans.
