  3. Do the same with butternut squash. Place potato and squash in a bigger bowl 🥣
  4. Peel and grate the zucchini in a separate bowl and once you have grated it squeeze the water 💦 out. Then add it to the potato and squash bowl.
  5. Add eggs and olive oil. Then sprinkle it with salt and other spices. (Fresh basil or any other herb will give this veggie mixture an unbelievable smell)
  6. Add flour and polenta and then mix everything well. (Meet lovers can add a bit of ham or turkey cut in small pieces. I'm sure bacon would be yummy!!)
  7. Place baking paper on a tray. Spread the mixture evenly to make it 4-5 cm thick covering the whole tray.
  8. Add more polenta on top, maybe a spoon. This will give it that crispiness!
  9. Pop in in the oven for 20-25 min. I like to serve it with fresh lettuce 🥬 or roasted peppers. Kefir goes great as well! Enjoy!
