- Prepare Salt and white pepper
Serve a heaping bowl of lentils with a piece of crusty bread as a meal in itself, or as a side dish. For the warm salad: Heat a large saute pan with enough olive oil to coat the pan. Naturally flavorful black lentils are tossed with fresh arugula, olives, and a simple lemon vinaigrette to make this low-effort, high-amazingness lentil salad. In a medium saucepan sweat the onion, garlic, and chili flake in neutral oil.
Instructions to make Lentil Vinaigrette🌱🪴:
- Cook the soffrritto in oil until soft. Add the hard and dried herbs. Add a knob of vegan butter. Add the washed lentils and top with stock and cook until lentils are tender. Drain.
- Whisk the vinaigrette ingredients together. Combine with the warm lentils. Allow to cool. Top with lemon zest, juice and chopped fresh herbs.
